15 Minute Meals by My Little Kitchen

Roast Dinner Croquettes

This is a great dish for leftovers and is especially good for vegetable shy children! I often make on a Saturday for lunch and get my toddler to help make the croquettes. 


  • 75g Cooked veg (I usually use broccoli or peas but you can use anything)

  • 110g Cooked Mashed Potato (roast potatoes that have gone soggy overnight in the fridge work fine for this, just stick in food blender to mash)

  • 25g Grated cheese (cheddar is fine) Optional

  • 60g Cooked Turkey (chicken also works)

  • 40g Breadcrumbs

  • 2 Small Eggs

  • Sunflower Oil for Frying


  1. Add all ingredients leaving aside 1 egg and 20g of breadcrumbs and blend in a food processor until smooth.

  2. Split mixture into 8 and shape ( I tend to make sausage shapes)

  3. Chill in the fridge for approx. 20 minutes.

  4. Lightly beat the remaining egg and coat the sausages in the egg, followed by the breadcrumbs. Put back in the fridge for another 10 minutes

  5. Heat the oil and fry until golden making sure they are hot all the way through.

One Pot Easy Peasy Pasta

An extremely quick and easy pasta dish using ingredients most of us already have in the fridge and freezer. You can experiment with different type’s vegetables, spinach also works really well with this.


  • 20g Pasta (any shape is fine but I use fusilli as it’s a great size for little hands)

  • 3tbsp Peas

  • Small handful of broccoli florets

  • 1tbsp (heaped) of cream cheese

  • Black pepper to taste


  1. Cook pasta according to packet instructions

  2. Add the peas and broccoli to pasta 5 minutes before the pasta is cooked.

  3. Once the peas, pasta and broccoli are all cooked, drain

  4. Add everything back to the saucepan and add the cream cheese and black pepper to taste

  5. Mix altogether mashing the broccoli slightly to blend in with the cream cheese

  6. Blend to the desired consistency or leave it as it is.

‘The Hulk’ Hummus

Dips can be a great way to have fun with food and this is so versatile. Serve with vegetable sticks, bread or even spread on rice/corn thins! All the ingredients can go straight in a food processor mashed by hand and is super quick to make


  • 1 Medium Courgette

  • ½ Medium Avocado

  • ¼ Cup Tahini or Olive oil (I use a medium tasting oil, extra virgin will be too strong)

  • 1 ½ tsp Ground Cumin

  • ½ Clove Minced Garlic

  • ½ Tsp Minced Ginger

  • ½ Lemon


  1. Add all the ingredients in a bowl (if mashing by hand) or a food processor and mash/blend together until you have the desired constancy.
